This last week was a crazy one. Can you relate?
I was really on track but then Wednesday came and everything fell apart. So much so that I am not even going to try to get caught up.
Having said that what I am sharing is what we actually had for dinner and not what I had planned. Unfortunately I was not able to make everything on the menu and I found myself improvising on occasion. One of the ways I do this is by doubling a recipe so we can have leftovers on the next.
