And no, I don't believe that the nutritional value of the food changes substantially. 
Also, good quality home cooked meals in a pressure cooker are much better for you than any take out or frozen meal.

How are you getting along?

You can even prep your veggies so they are ready whenever you are!⁠
You can wash, dry and cut them twice a week and either store them separately or assemble them as a salad.⁠
I prefer to store them separately in glass containers for two reasons:⁠
1. If I can see what I have I will use it.⁠
2. I can use them in my cooking too.⁠

Not because it's what on my schedule but because it makes my everyday life  less stressful and chaotic.
Instead, I choose to relax and have a cup of coffee.It's my favourite time of the day, and I want to savour it.
Being prepared feels good but sometimes I feel the need to slow down.

In our house we LOVE leftovers. Sometimes you can find us fighting over them. Others I portion out and freeze for later use.⁠
I have found that freezing them in small portions is best because:⁠
a) You can use the right amount of food, resulting in less waste.⁠
b) it thaws significantly quicker.⁠
c) everyone can choose something different to eat on "leftovers day"⁠
