My favorite snack – Energy balls

Energy Balls

Energy Balls

If you love snacks you must try my favorite snack – Energy balls.

I love snacks! Admittedly, I have the appetite of a toddler, because I can go from being totally satiated to hangry in about 2 seconds flat.

And, yes I do always carry something edible in my purse. No they are not for my mini me. He has his own. Although, I do eat some of his too.

Please tell me I am not the only one.

Fun part aside, snacks are a necessity around here. There had been countless times that there was not enough time to eat and had to grab something quickly before dashing through the door to make it on time. Or, you know, to not be very late.

This means that our snacks have to check a few boxes. First, they have to be portable. A delicious finely chopped fruit salad is just not an option. Let me explain. First, you need two hands to eat it, who is holding the baby? Second, there is a big chance of spilling it, on you, so you then have to go back and change your outfit; while your baby cries. Third, it needs to be refrigerated, but your cool bag is full of baby food. Fourth, you need to eat something nutritious because sugar can only keep you running for this much. You get the point.

So, mom snacks, need to be eaten one-handed and with minimal chance of staining your clothing. They also need to be nutritionally balanced and self-stable. And taste good. Let’s not forget about taste!

Well, this snack checks all these boxes and then some.

I am happy to report that my favorite snack, these energy balls, take about 10 min to make, dirty only one bowl and your little ones will love to make and eat.

I store them in the fridge because it makes them a little more firm, but you could easily store them in an airtight container on your counter. Although, this may result in eating them faster!

Ask me how I know!
