This quick and easy cheese pie is going to become your new favorite. Do you love pies? And cheese? But you don’t have

enough time to make your one?

Worry not! I have you covered. This pie is a lifesaver. It whips up in minutes, is very versatile and bakes in approximately 30 min.  So do yourself a favour and bake this with dinner tonight.

  • 2 cups flour
  • 1 cup milk or water
  • 2-3 Tablespoons oil or melted butter
  • 1 teaspoon baking powder
  • 100gr (3.5oz) ricotta cheese
  • 2 eggs
  • Salt and white pepper

In a medium bowl whisk flour and baking powder. Then add the oil and milk. In a separate bowl whisk the eggs. Add them to the flour mixture. Using a spatula or a wooden spoon stir everything together until you have a batter. Crumble the cheese and stir to combine. Oil or butter a round 26mm (10inch) baking dish and bake at 200C (470K) for 30 min or until a toothpick comes out clean.


It might not look like much but in my house, it is a crowd pleaser! Feel free to use it as a base to create your own versions to fit your tastes.
