I have been making this everyday salad dressing for at least five years. And, I am still not tired of it.
Salads are my favorite for a quick and light lunch. I need to run after little ones all day long, can you relate? There is no downtime.
Related to the downtime, salads can also be prepped in advance. Depending on the ingredients they can stay fresh in the fridge for up to four days! The not-so-secret trick is to keep the wet ingredients separately and add a paper towel to the container. Add your favorite everyday salad dressing in a dressing cup and you have a meal on the go.
Speaking on dressings there is really no reason to limit yourself to using it only on salads. A dressing can double as a marinade or the binding agent in a grain bowl. These can also be prepped in advance but we will talk about those in a separate post if you want. Tell me in the comments if you are interested.
If you think that a salad can’t hold you over until dinner time rolls around adding a protein can fix this. My favorites are roasted chicken and salmon. Other options include sausage, meatballs, eggs, beans, chickpeas, and cheese. But there are no rules to how you should build your salad.
ggOne more thing that I find convenient about this everyday salad dressing is that you can leave it out of the fridge for a long time. The only ingredient that might go bad is the lemon juice. But it is totally safe to take to work even if there is no fridge there.
As always in the kitchen, it is a good idea to taste test and see if you need to adjust any flavorings. Salt is the first that comes to mind.

INGREDIENTS:
- 1 tsn Dijon Mustard
- 1/8 cup lemon juice
- 1/4 cup olive oil
- 1/4 tsn salt
- 1 pinch white pepper
