I f you too are in a soup kick shy not give this a try?⁠ ⁠ ⁠ Chickpea Soup⁠ ⁠ ⁠ ⁠500 gr (1 pound)chickpeas⁠ 1 tbsp baking soda⁠ 3 carrots cut into coins⁠ 2 small onions cut in the round⁠ 1 lemon juiced⁠ 170 ml (6 fl oz) olive oil divided⁠ 1 bay leaf⁠ 1.5 lt (1.6 Quarts) vegetable broth or water⁠ ⁠ Soak chickpeas overnight in water and baking soda. Strain and rinse. Place chickpeas in the pressure cooker and add broth or water.⁠ Let them boil and remove foam using a spoon.⁠ Add half a cup of olive oil, carrots, onions, and the bay leaf. Pressure cook on HIGH for 30 min. Open the lid using the quick release method. If you don't know how to do that it's best to read your pressure cookers manual.⁠ Boil the soup until it reaches the consistency that you like best. Add the lemon juice and serve. This one uses garbanzo beans but you can swap any bean that you have on hand.⁠ And don't forget crusty bread to soak up all the delicious juices. ⁠ ⁠ ⁠Shakshuka⁠ ⁠ ⁠4 eggs⁠ 1 can chickpeas⁠ 1 pinch red pepper flakes⁠ 1 pinch sugar⁠ ⁠ In a saucepan, pour the crushed tomatoes and add the salt, pepper, and sugar. Simmer for 3-5 min until it thickens slightly.⁠ Meanwhile, rinse and drain the chickpeas. Add them to the sauce and stir. Cook for 5 min.⁠ Using a spoon make 4 wells and add one egg to each. Total comfort food.⁠ ⁠ Meatloaf⁠ ⁠ ⁠4 eggs⁠ 500 gr lean beef mince⁠ 1 tsp dried oregano⁠ 3 Tbsp olive oil⁠ 2 slices of bread stale is better⁠ 1 medium onion⁠ 2 cloves garlic⁠ 2 Tbsp white wine vinegar⁠ 1/2 cup flat-leaf parsley chopped⁠ ⁠ Place eggs in a saucepan and fill with water until covered by 2.5 cm (1 inch). ⁠ Bring water to a boil and boil for 2 min. Turn heat down and cover. Let them sit for 8 min. ⁠ Place saucepan under pouring water to cool the eggs. About 1 min.⁠ In a small bowl place the bread and cover it with water.⁠ Add parsley, onion, and garlic In a food processor and pulse until chopped but not purred. ⁠ Add the rest of the ingredients except for bread into a big bowl. Pour the parsley, onion, and garlic mixture. ⁠ Remove the crust from the bread and squeeze excess water. Crumble over the mince.⁠ Use your hands to combine these ingredients until evenly mixed.⁠ Oil a 2lt (2quart) pan and with oiled hands spread the mince mixture forms a rectangle. ⁠ Peel the eggs and place them in the middle of the rectangle lengthwise. ⁠Carrot Soup! A new favorite in our house. Packe ⁠Carrot Soup! A new favorite in our house. Packed in flavor and nutrients. ⁠ ⁠ It's the perfect light but filling dinner. Added bonus that it tastes even better the next day! So plan ahead to cook enough to have leftovers...⁠ ⁠ Carrot Soup⁠ ⁠ ⁠2 T Olive Oil⁠ 2 onions chopped⁠ 1 T grated ginger⁠ 2 garlic cloves grated⁠ 1 kg (1.1 pounds) carrots⁠ 4 cups of water⁠ ¼ -1/2 t dried thyme⁠ ½ t baking soda⁠ 1 T cider vinegar⁠ ⁠ ⁠ In a large saucepan heat olive oil over medium heat. Stir in onions, fresh ginger, and garlic. Cook stirring often, until onions are softened, 5-7 min. ⁠ Stir in carrots and cook for a minute or two. Add water, thyme, and baking soda. Increase heat to high and simmer. Reduce heat to medium-low, cover, and simmer gently until carrots are very tender, 20-25 min. ⁠ Let soup cool down and process in a blender. Return pureed soup to the pot and stir in vinegar. Return soup to brief simmer over medium heat.
