Happy Sunday, friends! Another late easy week of meals and snacks post. Maybe I should just change my posting schedule instead. What do you think? When is it most helpful for you to read a post like this? My goal is to give you some inspiration to cook for your family easy and quick dinners every day of the week. Whether that means cooking or repurposing your leftovers.
Because if you ever read just one of my “weekly meals and snacks posts” you know that I LOVE leftovers. So much so that I purposefully cook additional servings in order to have leftovers for lunch the next day.
OR
I repurpose them to make something completely different.
If you follow me on Instagram you might have seen some of my stories where I try to use up what we have, whether that is leftovers or random ingredients that are on their last leg.
For me, it is a commitment to spend less. Not only less money on groceries. Cooking, and cleaning up after that, takes time. I don’t want to spend my days over a sink of dirty dishes. I want to have fun and play with my kids. Go on trips and visit my friends.
I also hate wasting food. In a time when the environment suffers while more and more people go to sleep hungry, wasting food just doesn’t seem like an option for me.
I see repurposing leftovers and finding ways to use up random ingredients as a challenge. And I love a good challenge!
