Salsa is one of my favorite summer foods. It combines my love for tomatoes, onions and parsley in a very refreshing and tasty combination. Bonus points for being the perfect accompaniment to almost every summer bowl dish I can imagine.
For me there can be no summer without tomatoes and ice-cream. But since I am on a dairy free and low sugar diet for now let’s not talk much about the latter. Doctor’s orders. I really hope it goes away soon. Like, tomorrow soon!
But, back to the salsa.
Tomatoes may be my most loved vegetable (fruit?!) of all. Have you ever heard the joke that Greeks can’t eat if there is no feta on the table? Well, for me it’s feta and a side of tomatoes. I lovingly call it my “salad”.
Lately though I discovered “bowl meals”. Yes, I do live under a rock.
In real life, this kind of meal was very VERY appealing to only me in the family. So, it made no sense to serve them and make mealtimes a battle.
As we all know tastes change, so my patience was rewarded. And now I can have bowl meals on the regular.
And guess what else I make on the regular?
The rest will become toppings over rice, quinoa or any other grain I have on hand. It is the most delicious way to spice up your leftovers and reduce food and money waste.
I keep my salsa simple so even the little ones can enjoy it!
Do you have a favorite salsa recipe?
- 2 medium tomatoes I used one medium and a handful of yellow cherry tomatoes
- 1/2 bunch parsley
- 1 small red onion you can use a bigger one if you like
- 2 Tbsn Olive Oil
- Salt and Pepper to taste
